200g tofu
80g mangetout
1 red onion
120g whole beansprouts
chilli flakes
10g fresh chilli
Ginger
Garlic
200g rice noodles
120g pad thai stir fry sauce
2g pad thai garnish
How to Make Tofu Pad Thai
Place the rice noodles in a saucepan and cover with boiling water. Let them sit for 5 minutes, or until cooked, then drain and rinse under cold running water. Drizzle with a teaspoon of oil, toss, and set aside.
Heat a teaspoon of oil in a wok or large pan over high heat. Add the tofu and cook, turning to brown evenly on all sides.
Add the chopped ginger and garlic, followed by all the vegetables, chili slices, and chili flakes. Stir-fry until the vegetables begin to color.
Reduce the heat, add the rice noodles, and cook briefly. Pour in the pad Thai sauce and mix everything together, being careful not to break the noodles.
Simmer to let the sauce reduce slightly so it becomes sticky and coats the noodles.
Serve the pad Thai on plates, garnished with coriander, mint, fried shallots, a lime wedge, and crushed peanuts. Enjoy!
