Ingredients

  • 200g tofu
  • 80g mangetout
  • 1 red onion
  • 120g whole beansprouts
  • chilli flakes
  • 10g fresh chilli
  • Ginger
  • Garlic
  • 200g rice noodles
  • 120g pad thai stir fry sauce
  • 2g pad thai garnish

How to Make Tofu Pad Thai

  • Place the rice noodles in a saucepan and cover with boiling water. Let them sit for 5 minutes, or until cooked, then drain and rinse under cold running water. Drizzle with a teaspoon of oil, toss, and set aside.
  • Heat a teaspoon of oil in a wok or large pan over high heat. Add the tofu and cook, turning to brown evenly on all sides.
  • Add the chopped ginger and garlic, followed by all the vegetables, chili slices, and chili flakes. Stir-fry until the vegetables begin to color.
  • Reduce the heat, add the rice noodles, and cook briefly. Pour in the pad Thai sauce and mix everything together, being careful not to break the noodles.
  • Simmer to let the sauce reduce slightly so it becomes sticky and coats the noodles.
  • Serve the pad Thai on plates, garnished with coriander, mint, fried shallots, a lime wedge, and crushed peanuts. Enjoy!
